A clear sweetness and acidity are reminiscent of Raspberry, and a pleasantly sweet aftertaste is reminiscent of Milk Chocolate.

Coffee cherries are harvested in the ITADAKI plot, which locates on a steep slope at a high altitude. This lot applies 6 days of anaerobic fermentation first, then depulped without removing mucilage and drying. It has a sweetness derived from Honey process and a refreshing acidity reminiscent of Grapefruit.

The coffee cherries ripened slowly by growing in the high land plot of the farm, ITADAKI. It is finished with 7 days of anaerobic fermentation and then 23 days of slow drying. It has a floral aroma derived from the terroir with a condensed sweetness and acidity reminiscent of Cherry by fermentation and drying.
