This lot uses ideal coffee cherries at the maximum ripeness standardized by the owner. After fermentation with controlling temperatures, they are washed with spring water from the farm and dried on raised beds for two weeks. The coffee is further sorted using two methods, by machine and by hand, to ensure a higher quality. It has a flavor reminiscent of Jasmine and Bergamot with sweetness and acidity like Red Apple.
