Coffee cherries are dried on the raised beds for five days while piled up in a 15cm thick layer to aerobically ferment the outer layer and anaerobically ferment the inner layer. Then, they are dried in a temperature-controlled room. This lot is refined by two stages of fermentation and drying. Thus, these meticulous refining results in sweet acidity reminiscent of Plum.

■ALTIERI Special Ale DF 111

ALTIERI received high-ranking awards in the Natural and Washed categories at BOP 2024. Coffee cherries were dried on raised beds until they reached a 45% moisture level, anaerobically fermented in a sealed bag for 3 days, and dried again. This exquisite fruity cup has a spreading sweet floral aroma, with a sweetness like Kyoho Grape and Mandarin Orange that lingers through.
