They chose a processing method considering the characteristics of each plot to maximize the quality of the coffee and received the BOP awards.

The coffee cherries were refined by the Anaerobic Slow Drying (ASD) process: anaerobically fermented in tanks and dried slowly on raised beds. It was anaerobically fermented in tanks. Then, it dried slowly on raised beds until it reached the aimed moisture level. It was rested in the warehouse at a controlled temperature inside the special bag to develop the flavor.
The taste has a Jasmine-like aroma and sweet tartaric acidity reminiscent of Nectarine, with unique flavors brought out by the processing method.
