Justin practices natural farming and brings out the characteristics of Geisha with his original methods. This lot is refined by short and light fermentation in tanks with native yeast. Making with only the blessing of nature brings out a sweet aftertaste reminiscent of Nuts with an exquisite balance of sweetness and acidity reminiscent of Mandarin Orange.
