■ ESMERALDA Washed Mario 31AS

Mario is the plot in a legendary farm, “Jaramillo,” that spreads Geisha and represents Esmeralda. This lot is fermented anaerobically for 72 hours with yeast and slowly dried for 30 days, then machine-dried for eight hours. As a result, it has an elegant aroma reminiscent of Jasmine and a juicy sweetness and acidity like Orange.

■ Own farm HACIENDA COPEY Honey TAKARA Lot4

TAKARA plot is located on a mountain ridge with a gentle slope that serves as a winding path. Unique terroir, inhabiting ancient plants, nurtures coffee cherries full of fruits. Traditional Honey process brings out the sweetness itself. This cup has an elegant aroma reminiscent of Jasmine, sweetness with a smooth texture like Honey, and acidity like Meyer Lemon.

■ El Injerto Natural Malawi Geisha

Because the ripe cherry has a shiny ruby color, Malawi Geisha is also called “Ruby Geisha” in this farm. This lot was dried on the patio in a Greenhouse for six days, then in the machine for 72 hours. In the result, it helps to concentrate the fruit flavors in this variety. This cup has a Bergamot-like aroma and a good balance of sweetness and acidity reminiscent of Blood Orange.

■ KOTOWA Special Duncan Lot204

The farm’s owner, Mr.Koyner, is passionate about researching varieties and refining. This lot is fermented with lactic acid bacteria for 120 hours in stainless steel tanks maintained at 16℃. The Unique complex flavor is brought out by this method. This cup has a fruity taste like Red Wine, sweetness and acidity reminiscent of Pomegranate.

■ ESMERALDA Washed Reina 63AS

This lot was harvested from Reina plot in Jaramillo. It was washed after 72 hours of anaerobic fermentation. Then, it dried for 29 days on raised bed and 10 hours in a dryer. The harmony of the distinctive terroir and this process creates a variety of flavors. This cup has an elegant aroma reminiscent of Jasmine and a fruity sweetness and acidity.

■ Japanese Strawberry Sponge Cake

The juicy sweetness and sourness of seasonal strawberries, the richness and sweetness of the eggs from the thick custard cream pasted between each layer, and the subtle fragrant accent of the liquor are all exquisitely combined. The sponge cake and whipped cream melt together in the mouth, giving this Japanese Strawberry Sponge Cake a unique flavor and texture.
