■ Altieri Special Luci DF

This lot was dried on raised beds for four days to reduce the moisture level first, then anaerobically fermented for four days. This method was originally named “Dry Fermentation” and finished by drying in the greenhouse for 32 days. An elegant aroma reminiscent of Heliotrope. A juicy sweetness like Kosui Pear. A sweet acidity resembling Raspberry. These various flavors will spread fully into your mouth.

■ ELIDA Washed Falda

This lot is fermented 36 hours after depulping the fully ripened coffee cherry. Then, remove the mucilage by washing, and dried for 12 days on the raised beds. This cup has the clean taste signature of the Washed Geisha. It has a floral aroma reminiscent of Jasmine, a bright acidity like Grapefruit, and a sweet texture resembling Apricot.

This lot uses only the ripe coffee cherries selected by expert pickers. It was dried on the raised beds for 21 days, then dried for 10 days, controlling temperature and humidity to finish. As a result, it has a luscious aroma reminiscent of Fragrant Olive and a refreshing aroma like Neroli. High-quality acidity and a sweet texture like Tropical fruits are well balanced.

■ JANSON Natural Los Alpes Lot894

The Los Alpes, a terroir with large temperature differences, located around the Baru volcano, yields coffee cherries with a high sugar content. They are fermented anaerobically for 48 hours and then dried for 11 days on raised beds. This cup has a flavor and acidity reminiscent of Blood Orange and Raisin with a sweetness and texture like Milk Chocolate.
