This lot is one of the first lots to be marketed from KOTOWA’s new farm, “Silvia Marina.” After undergoing a special fermentation that stimulates the activation of yeast and bacteria on the coffee cherries, they are dried in a room with controlled temperature and humidity. After years of research, Mr. Jamison selects the best refining method according to the condition of the coffee cherries.
