■Own farm HACIENDA COPEY Special ITADAKI Lot128

The ITADAKI plot is the highest on the farm, at 2,100 masl. The vast temperature difference between day and night nurtures coffee cherries with a high sugar content. The coffee cherries were anaerobically fermented for 20 days in shade, then dried on raised beds. This lot has a gorgeous aroma reminiscent of Jasmine, characteristic of geisha, with bright and refreshing acidity like Acerola.

■El Injerto Washed Los Pinos

The Los Pinos plot is located at the highest elevation on the farm and has won COE. This cup is clean, and its quality is uniform by thorough manual sorting at every stage, from the harvest to the shipping. You can enjoy the gorgeous aroma reminiscent of white flowers and pleasant acidity like Blood Orange. Also, unique flavors such as Muscovado can be enjoyed.

■Nuguo Natural Casa

Finca Nuguo received high awards at BOP 2024 in both the Washed and Natural categories. Coffee cherries were slowly dried for one month in the dry room where the temperature and humidity could be controlled. Gorgeous aromas, acidity with texture, and lingering sweetness can be enjoyed. This exceptional cup has an outstanding cleanness that allows various flavors to be recollected.

■ESMERALDA Washed Tumaco Carnaval PA

This valuable lot is from Esmeralda’s private auction, where only the highest-quality Geisha of the year are offered. Coffee cherries were depulped, then fermented for 48 hours, and dried in a room where temperature and humidity could be controlled. A gorgeous aroma will overflow from the cup, and fruity rich sweetness and clear acidity reminiscent of various flowers and fruits lingers.

■Black Moon Washed

Mr. Hunter fully utilizes his agricultural knowledge and thoroughly manages the habitat on the farm to produce high-quality coffee cherries. Coffee cherries were depulped and aerobically fermented for 18 hours then dried in a cool and dry room for 20 hours. This cup has a sweet and gorgeous aroma reminiscent of Honeysuckle, and Citrus-like bright acidity will spread in your mouth.

■DEBORAH Special Enigma

This lot was produced at “FINCA DEBORAH” by the farm’s owner, Mr. Jamison. Coffee cherries were anaerobically fermented for over 100 hours in a sealed tank with CO2 while temperature and PH were controlled, then dried for about 25 days. This cup has a wide variety of flavors, including an aroma reminiscent of liquor brought out by the refining and condensed various fruit flavors.

■Cofinet Special Felipe Arcila

Mr. Felipe is the farm owner and one of the co-founders of Cofinet, and the farm has fertile volcanic soil. Coffee cherries were carefully sorted and spread on the raised beds and dried in a temperature-controlled room until they reached the ideal moisture level. This cup has sweet floral aromas, acidity like Plum, and a smooth texture that can be enjoyed.

■El Injerto Natural Los Pinos PA

This valuable lot was placed in the private auction by El Injerto. It was harvested from the Los Pinos plot, the highest plot on the farm and winner of many COE awards. Coffee cherries were sorted and dried on raised beds inside a greenhouse for 18 days. This cup has a bright acidity and sweetness like Muscovado, and a thick body taste can be enjoyed.

This lot was harvested from the Mario plot, located in the legendary farm “Jaramillo,” which spread Geisha and represents ESMERALDA. Coffee cherries were carefully dried on raised beds for 29 days. This cup has a gorgeous citric aroma and juicy sweet acidity like Apple with a smooth texture as a result of careful drying can be enjoyed.
