■KOTOWA Special Duncan Lot9211

Coffee cherries are dried on the raised beds for five days while piled up in a 15cm thick layer to aerobically ferment the outer layer and anaerobically ferment the inner layer. Then, they are dried in a temperature-controlled room. This lot is refined by two stages of fermentation and drying. Thus, these meticulous refining results in sweet acidity reminiscent of Plum.

■ALTIERI Special Ale DF 111

ALTIERI received high-ranking awards in the Natural and Washed categories at BOP 2024. Coffee cherries were dried on raised beds until they reached a 45% moisture level, anaerobically fermented in a sealed bag for 3 days, and dried again. This exquisite fruity cup has a spreading sweet floral aroma, with a sweetness like Kyoho Grape and Mandarin Orange that lingers through.

■JANSON Washed Cafetalera Lot401

This lot was harvested from the Noria plot, located on the legendary farm “Jaramillo,” which spread Geisha and represents ESMERALDA. Coffee cherries were depulped, then aerobically dry fermented in a steel tank in the cold room at 16℃ and carefully dried on raised beds for 23 days. This cup has a fruity, bright acidity and sweetness that lingers when coffee enters your mouth through the aftertaste.

■JANSON Washed Cafetalera Lot401

JANSON is committed to producing high-quality coffee beans in harmony with nature. At the gentle slope of Cafetalera, coffee cherries are exposed to ample sunlight throughout the day, nurturing large, well-formed cherries. The coffee cherries were depulped first, fermented for 96 hours, then dried on a patio for five days. Refreshing citrus flavor reminiscent of Hassaku can be enjoyed.

■LOS CENIZOS Natural Lulu Lot37

LOS CENIZOS has repeatedly won top prizes in the BOP. They studied not only their ripeness but also the time of day when the sugar content was at its highest, and this lot was harvested then. Coffee cherries were dried on raised beds for 21 days under the sun. Elegant floral aroma spreads, and juicy acidity reminiscent of Mandarin Orange and sweetness like Agave Syrup will linger through.

This is a highly valuable lot from the private auction, and we were the sole successful bidder. Coffee cherries were depulped and stirred regularly in the tank for 24 hours and then dried. This cup has a clean taste combined with moderate fermentation, resulting in floral aromas, and a juicy, fruity taste lingers. This supreme cup is presented by the 1st place winner of BOP 2024.

■MI FINQUITA Natural

At MI FINQUITA, the coffee beans are produced by hard work with love and passion of the owner and workers. This lot is carefully dried on raised beds for 22 days. It has a gorgeous aroma reminiscent of Jasmine with a juicy sweetness and texture like Yellow Peach, followed by an aftertaste resembling Guava spreads in the mouth.

■JANSON Natural Los Alpes Lot364

At Los Alpes farm, many shade trees are planted to prevent damage to the coffee trees caused by direct sunlight, and the coffee cherries are carefully nurtured. Coffee cherries were fermented for 72 hours and then dried by patio and mechanical dryer for a total of 13 days. Sweet acidity and aroma reminiscent of red fruits and a texture like Chocolate can be enjoyed.

■LAMASTUS Washed Elida Mina

Elida Estate is owned by the Lamastus family. The temperature drops below 10℃, and the coffee cherries ripen slowly. Depulped coffee cherries are fermented in a cool environment and then dried for 2 to 3 weeks. The blessed terroir and careful refining stand out. ■Own farm HACIENDA COPEY Special ITADAKI Lot128

The ITADAKI plot is the highest on the farm, at 2,100 masl. The vast temperature difference between day and night nurtures coffee cherries with a high sugar content. The coffee cherries were anaerobically fermented for 20 days in shade, then dried on raised beds. This lot has a gorgeous aroma reminiscent of Jasmine, characteristic of geisha, with bright and refreshing acidity like Acerola.

■El Injerto Washed Los Pinos

The Los Pinos plot is located at the highest elevation on the farm and has won COE. This cup is clean, and its quality is uniform by thorough manual sorting at every stage, from the harvest to the shipping. You can enjoy the gorgeous aroma reminiscent of white flowers and pleasant acidity like Blood Orange. Also, unique flavors such as Muscovado can be enjoyed.
