■Own farm HACIENDA COPEY Washed COE-W4

This lot won 4th place in the Washed category of COE Costa Rica. Depulping the coffee cherry by washing, then remove the mucilage by using the remover, and finished with clear taste. It was dried on raised bed and finished with a meticulous refining practicing daily sorting. You can fully enjoy the taste of HACIENDA COPEY, our farm that continuously challenge to become the best in the world.

■ESMERALDA Natural Tumaco 2NB

Cañas Verdes has a microclimate and nutrient-rich volcanic soil between two oceans on the slopes of the Baru Volcano. Coffee cherries are harvested and slowly dried on raised beds for 41 days. Devoted time and careful refining polish the cleanness, resulting in various floral aromas with a pleasant mouthfeel.

■LERIDA Washed Lot6

This lot was fermented in water after being depulped, then removed mucilage by washed process, and dried on the patio for 20 days. It has a floral aroma and citrus flavor signature of Geisha. This cup has a clean taste and mild sweetness typical of the washed process Geisha.

■KOTOWA Natural Silvia Marina Lot2345

This lot is one of the first lots to be marketed from KOTOWA’s new farm, “Silvia Marina.” After undergoing a special fermentation that stimulates the activation of yeast and bacteria on the coffee cherries, they are dried in a room with controlled temperature and humidity. This cup has a sweet acidity reminiscent of red fruits such as Raspberries, and a lingering sweetness with texture like Figs.

■ALTIERI Special Luci DFC

Coffee cherries are dried on raised beds first, followed by anaerobic fermentation then dried in a room with controlled temperature and humidity. The exquisite anaerobic fermentation and careful drying maximize the aroma, sweetness, and texture of this cup. The clean taste and the perfect balance of acidity and sweetness evoke a variety of flavors that only Altieri can produce.

■El Injerto Washed Los Pinos

The Los Pinos plot is located at the highest elevation on the farm and has won COE. This cup is clean, and its quality is uniform by thorough manual sorting at every stage, from the harvest to the shipping. You can enjoy the gorgeous aroma reminiscent of white flowers and pleasant acidity like Blood Orange. Also, unique flavors such as Muscovado can be enjoyed.

■SAVAGE Special PARABOLIC

After years of research, Mr. Jamison selects the best refining method according to the condition of the coffee cherries. Coffee cherries are sealed in a tank with only carbon dioxide and fermented for over 100 hours, recording temperature and pH. The calculated refining process gives this cup a rich flavor, with a heavy sweetness reminiscent of Rum Raisin and a Cognac-like alcohol taste.
