This lot was dried on raised beds for four days to reduce the moisture level first, then anaerobically fermented for four days. This method was originally named “Dry Fermentation” and finished by drying in the greenhouse for 32 days. An elegant aroma reminiscent of Heliotrope. A juicy sweetness like Kosui Pear. A sweet acidity resembling Raspberry. These various flavors will spread fully into your mouth.

This lot is fermented 36 hours after depulping the fully ripened coffee cherry. Then, remove the mucilage by washing, and dried for 12 days on the raised beds. This cup has the clean taste signature of the Washed Geisha. It has a floral aroma reminiscent of Jasmine, a bright acidity like Grapefruit, and a sweet texture resembling Apricot.
