The Los Alpes, a terroir with large temperature differences, located around the Baru volcano, yields coffee cherries with a high sugar content. They are fermented anaerobically for 48 hours and then dried for 11 days on raised beds. This cup has a flavor and acidity reminiscent of Blood Orange and Raisin with a sweetness and texture like Milk Chocolate.

This lot was harvested from a legendary plot Mario in Jaramillo, which gave the debut of Panama Geisha. The coffee cherries were dried for 31 days on the raised beds and then in the drying machine for five hours to finish. This cup has an elegant aroma reminiscent of Jasmine and a bright acidity like Grapefruit. It has texture and sweetness like Milk Chocolate.

Justin grows coffee by natural farming and continuously pursues ways to bring out the characteristics
of Geisha. This lot is fermented with natural coffee cherries’ yeast for 24 hours. Then, it is dried in four steps
to reach 10% moisture content. Floral aromas like Lavender have complex fruity flavors reminiscent of Raspberry,
Orange, and Nectarine.

In this lot, coffee cherries are sprayed with yeast after harvesting and then fermented for 24 hours in
tanks maintained at 20℃. It is then slowly dried for 23 days to bring out its characteristic alcoholic flavor. It
has an aroma like Bergamot, an acidity reminiscent of Red Currant, and a unique, refreshing alcoholic taste like an
Herbal Liqueur.
