This lot was harvested from a legendary plot, “Mario” in Jaramillo farm, that spreads Geisha and represents Esmeralda. After removing the pulp and mucilage with water, the coffee was anaerobically fermented for 72 hours in a sealed tank with yeast. Then, it was slowly dried for 24 days on raised beds. This cup has an elegant aroma reminiscent of Jasmine. Acidity like Amanatsu with sweetness and texture reminiscent of Apricot.

This lot uses ideal coffee cherries at the maximum ripeness standardized by the owner. After fermentation with controlling temperatures, they are washed with spring water from the farm and dried on raised beds for two weeks. The coffee is further sorted using two methods, by machine and by hand, to ensure a higher quality. It has a flavor reminiscent of Jasmine and Bergamot with sweetness and acidity like Red Apple.

This lot is fermented in water for 30-40 hours after depulping the fully ripened coffee cherry, then washed to remove the mucilage. This cup has a floral aroma reminiscent of Jasmine, a syrupy soft mouthfeel with a long finish, and a balanced acidity and sweetness reminiscent of Meyer Lemon.

Justin grows coffee by natural farming and continuously pursues ways to bring out the characteristics of Geisha. This lot is fermented with natural coffee cherries’ yeast for 24 hours. Then, it is dried in four steps to reach 10% moisture content. Floral aromas like Lavender have complex fruity flavors reminiscent of Raspberry, Orange, and Nectarine.

In this lot, coffee cherries are sprayed with yeast after harvesting and then fermented for 24 hours in tanks maintained at 20℃. It is then slowly dried for 23 days to bring out its characteristic alcoholic flavor. It has an aroma like Bergamot, an acidity reminiscent of Red Currant, and a unique, refreshing alcoholic taste like an Herbal Liqueur.

TAKARA plot is located on a mountain ridge with a gentle slope that serves as the wind’s path. Unique terroir, inhabiting ancient plants, nurtures coffee cherries full of fruits. The traditional Honey process brings out the sweetness of the coffee cherry itself. This cup has fresh acidity reminiscent of Lime and mild sweetness like Sugar Cane.

Mario Marin is in the highland, where a vast temperature difference nurtures sweet coffee cherries. This lot is rested in a cold dark room for two weeks when the moisture content reaches 15%. Then, it returns to the raised beds to dry until it reaches the ideal moisture content. As a result, it has sweetness and acidity like Blueberry with an aroma like Guava.

This sandwich is made with juicy chicken breast, and its umami spreads throughout the mouth when you bite. Also, refreshingly sour pickles with a crunchy texture and plenty of fresh vegetables are sandwiched.
